Stout-Braised Venison Roast is a substantial dish, offering a robust and flavorful experience for a special dinner. The stout beer works to tenderize the venison, resulting in a tender and aromatic main course. Slow cooking further enhances the meat’s natural flavors, providing depth with the beer’s malty notes. It pairs wonderfully with creamy mashed potatoes and roasted vegetables, making for a fulfilling meal.

Ingredients

  • 3 lbs venison roast
  • 1 bottle stout beer
  • 2 cups beef broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp flour
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

  1. Preheat oven to 325°F (165°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat.
  3. Season venison roast on all sides with salt, pepper, thyme, and rosemary, then dredge in flour.
  4. Using tongs, place the roast in the Dutch oven, searing until browned on all sides, about 6-8 minutes.
  5. Add chopped onion and garlic to the pot and sauté until the onion is translucent, about 3-4 minutes.
  6. Pour in stout beer and beef broth, stirring to combine. Bring to a gentle simmer.
  7. Cover the Dutch oven with a lid and transfer to the preheated oven. Braise for 2-3 hours, or until the venison is fork-tender.
  8. Once cooked, carefully remove the roast from the oven and let it rest for 10 minutes before slicing.
  9. Serve sliced venison roast with the braising liquid as a sauce, alongside chosen accompaniments.
