Ingredients

  • 4 bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.
  4. Add ground beef to the skillet. Cook until browned, breaking it apart with a spoon.
  5. Stir in cooked rice, marinara sauce, Italian seasoning, salt, and black pepper.
  6. Stuff each bell pepper with the beef and rice mixture, pressing down firmly.
  7. Place the stuffed peppers upright in a 9" x 13" baking dish. Pour a little water at the bottom to help steam the peppers.
  8. Cover the dish with foil and bake for 30 minutes.
  9. Remove the foil, sprinkle mozzarella cheese over the stuffed peppers, and bake uncovered for an additional 10 minutes or until the cheese is melted and bubbly.
  10. Allow the stuffed peppers to cool for a few minutes before serving.
