Ingredients
- 4 bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.
- Add ground beef to the skillet. Cook until browned, breaking it apart with a spoon.
- Stir in cooked rice, marinara sauce, Italian seasoning, salt, and black pepper.
- Stuff each bell pepper with the beef and rice mixture, pressing down firmly.
- Place the stuffed peppers upright in a 9" x 13" baking dish. Pour a little water at the bottom to help steam the peppers.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil, sprinkle mozzarella cheese over the stuffed peppers, and bake uncovered for an additional 10 minutes or until the cheese is melted and bubbly.
- Allow the stuffed peppers to cool for a few minutes before serving.
