Ingredients

  • 4 6 oz fillets wahoo fish
  • 1/4 cup tequila
  • 1/4 cup fresh lime juice
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/4 cup fresh cilantro, chopped
  • 1 Tbsp olive oil

Instructions

  1. In a small bowl, mix tequila, lime juice, garlic, cumin, chili powder, cilantro, and olive oil to create the marinade.
  2. Place wahoo fillets in a resealable plastic bag. Pour the marinade over the fillets, seal the bag, and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat, about 375°F (190°C).
  4. Remove the fish from the marinade, allowing excess to drip off, and place on a plate. Season both sides with a pinch of salt.
  5. Grill the fish for about 4-5 minutes on each side until it’s cooked through and flakes easily with a fork.
  6. Transfer the grilled wahoo to serving plates and garnish with additional chopped cilantro and lime wedges, if desired.
