Ingredients

  • 2 cups carrots, sliced
  • 2 cups brussels sprouts, halved
  • 1 cup cranberries, fresh or frozen
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon honey
  • 1 zest of one orange

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced carrots and halved brussels sprouts.
  3. Add olive oil, salt, and black pepper to the vegetables and toss well to coat.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the oven for 20 minutes, stirring once halfway through cooking.
  6. After 20 minutes, add the cranberries to the baking sheet with the vegetables.
  7. Drizzle honey over the cranberries and vegetables.
  8. Return to the oven and roast for an additional 20 minutes until vegetables are tender and golden brown.
  9. Remove from the oven and sprinkle orange zest over the warm medley.
  10. Serve immediately, garnished with additional orange zest if desired.
