Yellowman, also known as Milseog Bhuí in Irish, is a traditional Irish honeycomb toffee with a delightful crunchy texture and a caramelized flavor. This treat is easy to make and is great for satisfying sweet cravings or gifting for special occasions. The process involves caramelizing sugar and honey, adding baking soda for its bubbly texture, and allowing the mixture to set and harden. Enjoy it on its own or crumbled over desserts like ice cream for an added touch of sweetness.
Ingredients
- 1 cup granulated sugar
- 1/4 cup honey
- 1 tsp baking soda
Instructions
- In a heavy-bottomed saucepan, combine the granulated sugar and honey over medium heat, stirring continuously until the sugar dissolves completely.
- Allow the mixture to boil without stirring until it reaches 300°F (150°C) on a candy thermometer, which should take about 5 to 7 minutes.
- Remove the saucepan from the heat, quickly stir in the baking soda until well combined, and immediately pour the mixture onto a lined baking sheet.
- Let the Yellowman cool and harden for at least 1 hour before breaking it into pieces.
