Ingredients

  • 2 cups basmati rice
  • 1/2 cup mixed nuts, chopped (cashews, almonds)
  • 1/4 cup raisins
  • 1/4 cup ghee
  • 1 large onion, thinly sliced
  • 1/2 tsp saffron threads, soaked in 2 tbsp warm milk
  • 4 cups water
  • salt

Instructions

  1. Soak the basmati rice in water for 30 minutes, then drain thoroughly.
  2. In a large pot, heat the ghee over medium heat and sauté the onions until golden brown. Remove half and set aside for garnish.
  3. In the same pot, add the mixed nuts and raisins. Sauté for 2 minutes until the nuts are lightly toasted.
  4. Add the soaked saffron along with its milk to the pot and stir gently to mix the flavors.
  5. Spread half of the soaked rice over the nut mixture, then drizzle with half of the saffron milk.
  6. Repeat the layering process with the remaining rice and saffron milk. Top the final layer with the reserved caramelized onions.
  7. Pour water into the pot, season with salt, cover with a tight-fitting lid, and cook on low heat until the rice is tender and the water is absorbed, about 20 to 25 minutes.
  8. Once cooked, remove from heat and let it sit, covered, for 5 minutes to allow the flavors to meld.
  9. Fluff the rice gently with a fork before serving, ensuring the nuts and raisins are evenly distributed.
