Ingredients

  • 1 pound fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup ricotta cheese
  • 1 cup fresh dill, chopped
  • 1/2 cup fresh parsley, chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 package phyllo dough, thawed
  • 1/2 cup unsalted butter, melted
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chopped spinach, feta cheese, ricotta cheese, dill, parsley, onion, garlic, and olive oil.
  3. Place a sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Repeat with 5 more phyllo sheets, layering each on top of the other.
  4. Cut the layered phyllo stack into 4 strips lengthwise. Place a spoonful of the spinach mixture at the bottom of each strip and fold into triangles.
  5. Brush the tops of the triangles with beaten egg wash and place them on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, or until the triangles are golden brown and crisp. Serve with tzatziki sauce.
  7. For the tzatziki sauce, combine Greek yogurt, grated cucumber, garlic, dill, lemon juice, and salt in a bowl. Mix well and refrigerate until ready to serve.
