Ingredients

  • 1 pound dried butter beans
  • 4 cups water
  • 1 bay leaf
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1 teaspoon salt

Instructions

  1. Rinse the dried butter beans under cold water.
  2. Place beans in a large saucepan with 4 cups of water and the bay leaf. Bring to a boil.
  3. Reduce heat to low and simmer for 60-70 minutes until beans are soft. Drain and set aside.
  4. In a separate pan, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until onion is translucent.
  5. Add dried thyme and black pepper, stirring to combine.
  6. Add the cooked beans and heavy cream to the pan. Stir gently to coat the beans with the sauce.
  7. Simmer for another 10 minutes until the sauce thickens slightly.
  8. Season with salt to taste before serving.
