Ingredients
- 1 pound dried butter beans
- 4 cups water
- 1 bay leaf
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1 teaspoon salt
Instructions
- Rinse the dried butter beans under cold water.
- Place beans in a large saucepan with 4 cups of water and the bay leaf. Bring to a boil.
- Reduce heat to low and simmer for 60-70 minutes until beans are soft. Drain and set aside.
- In a separate pan, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until onion is translucent.
- Add dried thyme and black pepper, stirring to combine.
- Add the cooked beans and heavy cream to the pan. Stir gently to coat the beans with the sauce.
- Simmer for another 10 minutes until the sauce thickens slightly.
- Season with salt to taste before serving.
