Ingredients

  • 4 medium zucchinis, spiralized
  • 2 cans tuna, drained
  • 1/2 cup basil leaves, packed
  • 1/4 cup pine nuts
  • 2 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/2 cup parmesan cheese, grated

Instructions

  1. Spiralize the zucchinis to create zoodles and set aside.
  2. In a food processor, combine the basil leaves, pine nuts, and garlic. Add half of the olive oil and blend until smooth.
  3. Add the grated Parmesan cheese to the pesto mixture and blend again. Gradually add the remaining olive oil while blending until the mixture is well incorporated.
  4. Heat a tablespoon of olive oil in a large skillet over medium heat.
  5. Add the zucchini zoodles to the skillet and sauté for 2 to 3 minutes until slightly softened.
  6. Add the drained tuna to the skillet and cook while stirring gently for about 2 to 3 minutes until heated through.
  7. Pour the pesto sauce over the zoodles and tuna in the skillet. Toss everything together to ensure the zoodles and tuna are well coated with the pesto.
  8. Taste and adjust the seasoning with salt and pepper.
