  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 2 tablespoons chopped chives

  1. Preheat the oven to 375ยฐF (190ยฐC) and grease a mini donut pan.
  2. In a large bowl, combine the mashed potatoes, flour, buttermilk, baking powder, baking soda, and salt.
  3. Add the melted butter and egg to the mixture and stir until smooth.
  4. Fold in the chopped chives.
  5. Spoon the batter into the prepared mini donut pan, filling each cavity approximately three-quarters full.
  6. Bake for 12-15 minutes, or until the donuts are golden brown and firm to the touch.
