This Japanese Cheesecake Makes Us Want to Spoon All Weekend

It’s too easy.

The viral Japanese Cheesecake recipe is so soft, so airy, and so wildly easy that it’s taken over our feeds — and our plans. Made with just two ingredients (three if you count sweetener), it’s the kind of dessert you don’t slice so much as scoop. And we’ll be spooning with this version all weekend long.

Viral Two-Ingredient Skyr and Biscoff Cookie Dessert

Enjoy this creamy, crunchy dessert featuring the unique combination of skyr and Biscoff cookies. Also known as “Japanese Cheesecake,” this one’s uber-quick and easy to prepare! Just note that the best results come when you let the dessert chill overnight in the fridge, allowing for the cookies to become soft and cakey.

Ingredients

  • 2 cups skyr
  • 2 tablespoons maple syrup, optional
  • 8 Biscoff cookies, whole
  • 2 Biscoff cookies, crushed

Instructions

  1. Open your tub of skyr; stir in the maple syrup if using.
  2. Push the whole Biscoff cookies down into the skyr.
  3. Reaffix the lid and refrigerate overnight so the cookies get all soft and cakey.
  4. Evenly distribute the skyr into 4 bowls (or just eat straight from the tub).
  5. Top with crushed cookies, serve, and enjoy.
