Fresh and vibrant, these Ahi Poke Bowls are layered with savory tuna and zesty mango salsa for a flavorful meal.

Ingredients

  • 1 lb ahi tuna, sushi-grade, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha sauce
  • 2 cups cooked jasmine rice
  • 1 cup mango, diced
  • 1 small red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 1 avocado, sliced
  • 1 teaspoon lime juice

Instructions

  1. In a bowl, combine soy sauce, sesame oil, and sriracha sauce. Add the diced ahi tuna, mix well, and let marinate for 10 minutes.
  2. In another bowl, mix the diced mango, red onion, cilantro, lime juice, salt, and pepper to make the mango salsa.
  3. Divide the cooked jasmine rice into four bowls.
  4. Top each bowl with equal portions of the marinated ahi tuna and mango salsa.
  5. Add slices of avocado to each bowl.
  6. Garnish with sesame seeds and additional cilantro, if desired.
  7. Serve immediately.
