These balsamic glazed spring carrots are tender and sweet, beautifully complemented by a tangy balsamic reduction.

Ingredients

  • 1 1/2 pounds spring carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine olive oil, balsamic vinegar, honey, salt, and black pepper.
