Ingredients

  • 1 cup lentils
  • 1 cup bulgur wheat
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 4 cups vegetable broth
  • 2 Tbsp olive oil

Instructions

  1. Heat 2 Tbsp of olive oil in a large pot over medium heat.
  2. Add the chopped onions and minced garlic, sauté for 2 to 3 minutes until onions are translucent.
  3. Stir in the lentils, bulgur wheat, cumin, and paprika. Cook for 2 more minutes, stirring occasionally.
  4. Pour in the vegetable broth and stir well.
  5. Cover the pot and bring to a simmer. Cook for 30-40 minutes, stirring occasionally, until the lentils and bulgur are tender.
  6. Remove from heat and let it sit covered for 5 minutes. Then fluff the pilaf with a fork before serving.
