Ingredients

  • 2 tablespoons butter, divided
  • 1 large onion, thinly sliced
  • 8 slices sourdough bread
  • 1 cup Gruyère cheese, grated
  • 4 tablespoons fig jam
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Melt 1 tablespoon of butter in a skillet over medium heat.
  2. Add the sliced onions and cook, stirring occasionally, until softened and caramelized, about 20 minutes. Season with salt and pepper.
  3. Spread fig jam on one side of each bread slice.
  4. Divide the Gruyère cheese evenly among four slices of bread, on the opposite side of the jam.
  5. Pile caramelized onions on top of the cheese, then top with remaining bread slices, jam side in.
  6. Heat the remaining butter in a large skillet over medium heat.
  7. Place sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 4-5 minutes per side.
