  • 2 medium carrots, diced
  • 1 cup peas, frozen
  • 2 stalks green onions, chopped
  • 2 tbsp rice vinegar

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium heat until shimmering.
  2. Add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant.
  3. Add the diced carrots and cook for 3-4 minutes until they are slightly softened.
  4. Move the vegetables to one side of the pan and add the cubed tofu to the other side. Cook for 4-5 minutes, stirring occasionally, until the tofu is golden brown.
  5. Stir in the cauliflower rice, frozen peas, and chopped green onions.
  6. Pour in the soy sauce, sesame oil, and rice vinegar. Stir well to ensure everything is evenly coated.
  7. Cook for an additional 5-7 minutes until the cauliflower is tender but still firm.
  8. Serve immediately.
