  2. In a large pot, combine the rice and water. Bring to a boil over high heat, then reduce to a simmer.

  4. While the rice is cooking, peel the century eggs and cut them into small cubes.
  5. Once the congee is ready, add salt, century eggs, green onions, ginger, and soy sauce to the pot. Stir well to combine.
