Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces udon noodles
  • 1/2 cup sweet chili sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 large red bell pepper, sliced
  • 1 cup broccoli florets
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon vegetable oil

Instructions

  1. Cook udon noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat vegetable oil over medium-high heat.
  3. Add garlic and ginger, stirring constantly for 30 seconds until fragrant.
  4. Add shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove and set aside.
  5. In the same skillet, add red bell pepper and broccoli florets. Stir-fry for 4-5 minutes until tender-crisp.
  6. Return the shrimp to the skillet and add sweet chili sauce, soy sauce, and sesame oil. Stir well to coat.
  7. Add cooked udon noodles and green onions. Toss everything together and heat through for 2 minutes.
  8. Serve hot, garnished with additional green onions if desired.
