  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1 cup red bell pepper, thinly sliced
  • 1/2 cup fresh cilantro leaves
  • 1 cup fresh mint leaves
  • 1/4 cup unsalted roasted peanuts, chopped
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 2 tablespoons honey
  • 1/4 cup warm water

Instructions

  1. Prepare all your vegetables by shredding the carrots, julienning the cucumbers, and slicing the bell peppers thinly.
  2. Fill a large bowl with warm water. Dip one rice paper wrapper at a time into the water for 5 seconds to soften, then lay flat on a clean surface.
  3. In the center of the wrapper, place a small amount of carrots, cucumber, bell pepper, cilantro, mint, and some chopped peanuts.
  4. Fold the sides inward and then tightly roll the wrapper from the bottom to the top, enclosing the filling. Repeat with remaining wrappers and filling.
  5. To make the peanut dipping sauce, whisk together the peanut butter, soy sauce, lime juice, honey, and warm water until smooth.
  6. Serve the rolls with the peanut dipping sauce on the side.
