Ingredients
- 8 rice paper wrappers
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- 1 cup red bell pepper, thinly sliced
- 1/2 cup fresh cilantro leaves
- 1 cup fresh mint leaves
- 1/4 cup unsalted roasted peanuts, chopped
- 1/2 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 2 tablespoons honey
- 1/4 cup warm water
Instructions
- Prepare all your vegetables by shredding the carrots, julienning the cucumbers, and slicing the bell peppers thinly.
- Fill a large bowl with warm water. Dip one rice paper wrapper at a time into the water for 5 seconds to soften, then lay flat on a clean surface.
- In the center of the wrapper, place a small amount of carrots, cucumber, bell pepper, cilantro, mint, and some chopped peanuts.
- Fold the sides inward and then tightly roll the wrapper from the bottom to the top, enclosing the filling. Repeat with remaining wrappers and filling.
- To make the peanut dipping sauce, whisk together the peanut butter, soy sauce, lime juice, honey, and warm water until smooth.
- Serve the rolls with the peanut dipping sauce on the side.
