- 4 large bell peppers
- 1 15 oz can chickpeas, drained and rinsed
- 1 cup couscous

- 1/4 cup fresh parsley, chopped
- 2 Tbsp lemon juice

Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine chickpeas, couscous, onion, garlic, cumin, coriander, paprika, parsley, lemon juice, and olive oil. Mix well.
