Ingredients

  • 1 cup water
  • 2 1/2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 cup all-purpose flour
  • 1 quart vegetable oil for frying
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 pint vanilla ice cream

Instructions

  1. In a small saucepan over medium heat, combine 1 cup of water, 2 1/2 tablespoons sugar, 1/2 teaspoon salt, and 2 tablespoons vegetable oil. Bring the mixture to a boil.
  2. Remove from heat and stir in 1 cup of all-purpose flour until a dough ball forms.
  3. Transfer the dough into a pastry bag fitted with a star tip.
  4. Heat 1 quart of vegetable oil in a deep saucepan to 375°F (190°C).
  5. Pipe 4-inch strips of dough into the hot oil and fry until golden brown, around 2 minutes per side. Fry in batches to avoid overcrowding.
  6. Drain the churros on paper towels.
  7. In a shallow dish, combine 1/2 cup sugar and 1 teaspoon ground cinnamon. Roll each churro in the cinnamon-sugar mixture until well-coated.
  8. Slice each churro in half lengthwise. Place a scoop of vanilla ice cream on one half and sandwich with the other half.
  9. Serve immediately to enjoy the contrast of warm churro and cold ice cream.
