Ingredients

  • 1 pound salmon fillet, skinless
  • 1/2 cup heavy cream
  • 1 cup orzo
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon zest
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil

Instructions

  1. Pat the salmon fillet dry and season with lemon zest. Set aside.
  2. In a large pot, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add orzo and toast until lightly browned. Pour in vegetable broth and bring to a simmer.
  4. Place seasoned salmon on top of the orzo. Cover and cook for 10-12 minutes or until salmon flakes easily with a fork and the orzo is tender.
  5. Stir in heavy cream, butter, and chopped dill. Cook, stirring occasionally, until the sauce thickens, about 3-5 minutes.
  6. Taste and adjust seasoning if necessary. Serve warm, garnished with additional dill and lemon zest.
