Ingredients

  • 2 lbs fresh clams, scrubbed

  • 1 medium jalapeno, seeded and minced
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the clams and cook until they open, about 5-7 minutes.
  3. Remove the clams from the water and let them cool.
  4. Once cool, shuck the clams, discarding the shells.
  5. Chop the clams into small pieces and place them in a bowl.
  6. Add the lime juice, coriander, red onion, jalapeno, salt, and black pepper to the bowl with the clams.
  7. Stir well to combine, then cover and refrigerate for at least 1 hour to allow the flavors to meld.
  8. Serve the ceviche chilled, garnished with additional coriander leaves.
