Ingredients

  • 1 cup polenta
  • 3 cups vegetable broth
  • 1/2 cup breadcrumbs
  • 1/2 cup marinara sauce

  • tsp salt
  • tsp black pepper

  1. Bring the vegetable broth to a boil in a saucepan.
  2. Whisk the polenta into the boiling broth along with salt and black pepper, stirring continuously to prevent lumps.
  3. Simmer the mixture on low heat for 15-20 minutes, stirring occasionally until it thickens.
  4. Transfer the thickened polenta into a greased baking dish. Spread evenly and allow to cool slightly before refrigerating. Chill until set, about 2 hours.
  5. Once firm, cut the polenta into bite-sized squares.
  6. Lightly brush each square with olive oil, then evenly coat with breadcrumbs.
  7. Preheat a skillet over medium heat and add enough olive oil to cover the base. Fry the breaded polenta bites until golden on each side, approximately 3-4 minutes per side.
  8. Serve the polenta bites warm with a side of marinara sauce for dipping.
