Ingredients

  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 cup cilantro, chopped

Instructions

  1. Preheat a grill to medium heat.
  2. Grill the ears of corn for about 15 minutes, turning occasionally, until they are charred and cooked through.
  3. In a small bowl, mix together the mayonnaise, sour cream, lime juice, salt, and half of the cotija cheese.
  4. Once the corn is cooked, remove it from the grill and let it cool for a few minutes.
  5. Spread the mayonnaise mixture evenly over each ear of corn.
  6. Sprinkle with chili powder and the remaining cotija cheese.
  7. Garnish with chopped cilantro before serving.
