  • 3 cloves garlic, minced

  • 1/4 tsp cayenne pepper
  • 1 tbsp lemon juice

Instructions

  2. Add 1 medium onion, diced, and 3 cloves of garlic, minced; sauté for 2 to 3 minutes until translucent.
  3. Stir in 1 tsp smoked paprika, 1/2 tsp cumin, and 1/4 tsp cayenne pepper, and cook for 1 minute.
  4. Add the drained and rinsed chickpeas and cook for about 5 minutes, stirring occasionally.
  5. Add spinach in batches, allowing each batch to wilt before adding more.
  6. Continue to cook until all spinach is wilted and chickpeas are heated through.
  7. Season with lemon juice and add salt and pepper to taste.
