These grilled vegetable quesadillas paired with spicy salsa offer a flavorful, crunchy twist on a classic dish.
Ingredients
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- 1 jalapeño, minced
- 1 1/2 cups shredded cheese blend
- 8 flour tortillas
- 1/2 cup fresh cilantro, chopped
- 1/2 cup salsa

Instructions
- Preheat the grill to medium-high heat.

- Meanwhile, combine minced jalapeño, fresh cilantro, and salsa in a bowl for the spicy salsa.
- Cut the grilled quesadillas into wedges and serve with the spicy salsa on the side.
