These grilled vegetable quesadillas paired with spicy salsa offer a flavorful, crunchy twist on a classic dish.

Ingredients

  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 jalapeño, minced
  • 1 1/2 cups shredded cheese blend
  • 8 flour tortillas
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup salsa

Instructions

  1. Preheat the grill to medium-high heat.

  6. Top each one with the remaining tortillas to form quesadillas.
  7. Place the quesadillas on the grill for about 2-3 minutes per side until the cheese is melted and the tortillas are crispy.
  8. Meanwhile, combine minced jalapeño, fresh cilantro, and salsa in a bowl for the spicy salsa.
  9. Cut the grilled quesadillas into wedges and serve with the spicy salsa on the side.
