Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 1/2 cup freshly squeezed orange juice
  • 4 egg yolks

Instructions

  1. In a saucepan over medium heat, combine heavy cream, whole milk, and sugar. Stir until the sugar is dissolved.
  2. Add ground cardamom, vanilla extract, and orange zest. Mix well and heat until just about to simmer.
  3. In a separate bowl, whisk egg yolks. Slowly drizzle in 1 cup of the hot cream mixture to temper the yolks, whisking constantly.
  4. Pour the tempered yolk mixture back into the saucepan with the remaining cream mixture.
  5. Cook over low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon.
  6. Remove from heat and stir in freshly squeezed orange juice. Allow the mixture to cool at room temperature.
  7. Refrigerate for at least 2 hours or until completely cold.
  8. Pour chilled mixture into an ice cream maker and churn according to manufacturer's instructions.
  9. Transfer to a lidded container and freeze for at least 4 hours before serving.
