Ingredients

  • 1 1/2 cups shelled pistachios
  • 2 tablespoons honey
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Spread the shelled pistachios in a single layer on a baking sheet.
  2. Roast the pistachios in the oven for 5-7 minutes, stirring halfway through, until they are fragrant and just starting to brown.
  3. Allow the pistachios to cool slightly, then transfer them to a food processor.
  4. Process the pistachios for about 2-3 minutes until they form a coarse meal.
  5. Add honey, vegetable oil, salt, and vanilla extract to the food processor.
  6. Continue processing until the mixture becomes smooth and creamy, scraping down the sides as necessary.
  7. Taste and adjust sweetness or saltiness to your preference.
  8. Transfer the pistachio spread to a clean jar and store in the refrigerator.
