Ingredients

  • 2 lbs Shellfish shells
  • 1 whole Onion, chopped
  • 2 stalks Celery, chopped
  • 2 whole Carrots, chopped
  • 1 bunch Parsley stems
  • 2 whole Bay leaves
  • 6 cups Water

Instructions

  1. Rinse the shellfish shells under cold water to remove any debris and sand.
  2. Place the rinsed shells in a large pot along with chopped onion, celery, carrots, parsley stems, and bay leaves.
  3. Add water to the pot, ensuring all ingredients are fully submerged.
  4. Bring the pot to a boil over high heat, then lower the heat to maintain a gentle simmer.
  5. Allow the mixture to simmer uncovered for 1 hour, occasionally skimming off any foam that forms on the surface.
  6. After simmering, remove the pot from heat and carefully strain the stock through a fine mesh sieve into a large bowl, discarding the solids.
  7. If not using immediately, cool the stock at room temperature before transferring to the refrigerator or freezer for storage.
