  • 1 cup brown lentils, rinsed
  • 4 cups water
  • 2 tablespoons olive oil

  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large saucepan, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  3. Stir in the minced garlic, cumin seeds, ground coriander, ground turmeric, and chili powder, cooking for another 2 minutes until fragrant.
  4. Add the rinsed brown rice and lentils to the pan, stirring to coat them with the spices.
  5. Pour in the water and add the salt. Bring to a boil, then reduce the heat to low.
  6. Cover the pan and let it simmer for 35-40 minutes, or until the rice and lentils are tender and the liquid is absorbed.
  7. Remove from heat and let the mixture sit, covered, for another 5 minutes.
  8. Fluff the rice and lentils with a fork, stir in the chopped cilantro, and serve warm.
