Ingredients
- 1 whole chicken, cut into pieces
- 1 can coconut milk
- 2 stalks lemongrass, bruised
- 3 slices galangal
- 4 leaves kaffir lime leaves
- 1 tbsp tamarind paste
- 1 tbsp palm sugar
- 5 cups water
Instructions
- In a large pot, heat 2 tablespoons of oil over medium heat.
- Add the lemongrass, galangal, and kaffir lime leaves. Saute for 2 to 3 minutes until fragrant.
- Add the chicken pieces and brown on all sides for about 5 minutes.
