Ingredients

  • 1 whole chicken, cut into pieces
  • 1 can coconut milk
  • 2 stalks lemongrass, bruised
  • 3 slices galangal
  • 4 leaves kaffir lime leaves
  • 1 tbsp tamarind paste
  • 1 tbsp palm sugar
  • 5 cups water

Instructions

  1. In a large pot, heat 2 tablespoons of oil over medium heat.
  2. Add the lemongrass, galangal, and kaffir lime leaves. Saute for 2 to 3 minutes until fragrant.
  3. Add the chicken pieces and brown on all sides for about 5 minutes.
  4. Pour in the coconut milk and water. Stir in the tamarind paste and palm sugar until well combined.
  5. Cover the pot and simmer for 30 minutes, stirring occasionally to prevent sticking.
  6. Uncover the pot and cook for an additional 15 minutes to allow the sauce to thicken.
