Ingredients

  • 2 lbs oxtail
  • 1 cup peanut butter
  • 1 cup annatto seeds, soaked in 1 cup water
  • 1 bunch string beans, cut into 2-inch pieces
  • 1 large eggplant, sliced
  • 2 pieces banana heart, sliced

Instructions

  1. Place oxtail in a large pot, cover with water, and bring to a simmer. Cook for 2 hours until the meat is tender, skimming off any foam.
  2. In a separate pan over medium heat, toast annatto seeds until fragrant, then grind them into a powder using a spice grinder or mortar and pestle.
  3. In a bowl, mix peanut butter with the ground annatto seeds and 1 cup of water to form a smooth sauce.
  4. Pour the peanut sauce over the cooked oxtail in the pot. Stir to combine thoroughly.
  5. Add the string beans, eggplant, and banana heart to the pot. Continue to simmer for another 30 minutes until the vegetables are tender.
  6. Serve the Kare-Kare hot, accompanied by bagoong (shrimp paste) on the side.
