Ingredients
- 2 pounds beef bones
- 1 onion, halved
- 3 inches ginger, sliced
- 2 star anise
- 1 cinnamon stick
- 4 cloves
- 1/4 cup fish sauce
- 1 tablespoon sugar
- 8 ounces rice noodles
- 1 pound beef sirloin, thinly sliced
- 1 cup bean sprouts
- 1/2 cup basil leaves
- 1/2 cup cilantro leaves
- 1 lime, cut into wedges
Instructions
- Preheat the oven to 425°F (220°C). Place beef bones on a roasting pan and roast for 30 minutes.
- Char the onion and ginger under the broiler until blackened on both sides, about 10 minutes.
- In a large stockpot, add roasted bones, charred onion and ginger, star anise, cinnamon stick, and cloves.
- Cover with water and bring to a boil. Reduce heat and simmer for 2 hours, skimming off any foam or impurities.
- Add fish sauce and sugar to the broth. Adjust seasoning to taste.
- Soak rice noodles in warm water for 30 minutes, or until softened. Drain.
- Bring a pot of water to a rolling boil and cook noodles for 1 minute. Drain and divide among bowls.
- Place thinly sliced beef sirloin on top of noodles.
- Ladle hot broth over beef and noodles, cooking the beef gently.
- Garnish with bean sprouts, basil, cilantro, and lime wedges before serving.
