Ingredients
- 1 lb fish fillets
- 1 cup coconut milk
- 2 tsp tamarind paste
- 1 tbsp coriander powder
- 1 tsp turmeric powder
- 2 tbsp vegetable oil
- 1 tsp mustard seeds
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 inch ginger, grated
Instructions
- Marinate fish fillets with 1 tsp turmeric powder and 1 tsp salt. Set aside for 15 minutes.
- Heat 2 tbsp vegetable oil in a pan over medium heat. Add 1 tsp mustard seeds and let them splutter.
- Add sliced onion, minced garlic, and grated ginger. Saute for 2 to 3 minutes until onions are translucent.
- Mix in 1 tbsp coriander powder, 2 tsp tamarind paste, and 1 cup coconut milk. Simmer for 10 minutes on low heat.
- Gently add the marinated fish fillets to the pan. Cook for another 10 minutes until the fish is cooked through.
- Serve the curry hot with steamed rice or parathas.
