Ingredients

  • 6 large eggs
  • 1/2 cup heavy cream
  • 1 cup Gruyère cheese, grated
  • 2 tablespoons olive oil
  • 2 medium potatoes, thinly sliced
  • 1 bunch spring onions, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.
  3. Stir in the grated Gruyère cheese and set aside.
  4. In a 9-inch ovenproof skillet, heat olive oil over medium heat. Add the sliced potatoes and cook for about 10 minutes, stirring occasionally, until tender and lightly golden.
  5. Add the sliced spring onions and cook for another 2 minutes, until fragrant.
  6. Pour the egg mixture over the potatoes and onions in the skillet. Let it cook undisturbed for about 5 minutes until the edges start setting.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the frittata is fully set and slightly golden on top.
  8. Remove from the oven and let it cool for a few minutes before slicing and serving warm.
