Ingredients
- 6 large eggs
- 1/2 cup heavy cream
- 1 cup Gruyère cheese, grated
- 2 tablespoons olive oil
- 2 medium potatoes, thinly sliced
- 1 bunch spring onions, sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.
- Stir in the grated Gruyère cheese and set aside.
- In a 9-inch ovenproof skillet, heat olive oil over medium heat. Add the sliced potatoes and cook for about 10 minutes, stirring occasionally, until tender and lightly golden.
- Add the sliced spring onions and cook for another 2 minutes, until fragrant.
- Pour the egg mixture over the potatoes and onions in the skillet. Let it cook undisturbed for about 5 minutes until the edges start setting.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the frittata is fully set and slightly golden on top.
- Remove from the oven and let it cool for a few minutes before slicing and serving warm.
