Ingredients
- 2 large artichokes
- 1/4 cup extra virgin olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup mayonnaise
- 1 teaspoon lemon zest
- 1 tablespoon fresh dill, chopped
Instructions
- Trim the tops of the artichokes and cut them in half lengthwise.
- In a pot, bring salted water to a boil and add the artichokes. Cook for 10 minutes until slightly tender.
- Remove the artichokes and let them cool slightly.
- Preheat the grill to medium heat.
- In a small bowl, combine olive oil, lemon juice, minced garlic, parsley, salt, and black pepper.

- Place the artichokes on the grill, cut side down, and grill for 8-10 minutes until charred.
- For the aioli, mix mayonnaise, lemon zest, dill, and remaining minced garlic.
