Ingredients

  • 2 large artichokes
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh dill, chopped

Instructions

  1. Trim the tops of the artichokes and cut them in half lengthwise.
  2. In a pot, bring salted water to a boil and add the artichokes. Cook for 10 minutes until slightly tender.
  3. Remove the artichokes and let them cool slightly.
  4. Preheat the grill to medium heat.
  5. In a small bowl, combine olive oil, lemon juice, minced garlic, parsley, salt, and black pepper.
  6. Brush the artichokes with the olive oil mixture.
  7. Place the artichokes on the grill, cut side down, and grill for 8-10 minutes until charred.
  8. For the aioli, mix mayonnaise, lemon zest, dill, and remaining minced garlic.
  9. Serve the artichokes with the garlic aioli for dipping.
