Ingredients
- 1 lb broccoli, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup Parmesan cheese, grated
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the broccoli florets with olive oil, lemon zest, lemon juice, salt, and black pepper until well coated.
- Spread the broccoli onto a baking sheet in a single layer.
- Roast the broccoli in the preheated oven for 15-20 minutes, turning halfway through, until tender and slightly charred.
- While the broccoli is roasting, heat a non-stick skillet over medium-high heat.
- Place small mounds (about a tablespoon each) of grated Parmesan cheese onto the skillet, lightly pressing them down to form rounds.
- Cook the Parmesan rounds for about 1-2 minutes until they turn golden brown and crispy. Remove from skillet and cool on a wire rack.
- Serve the roasted broccoli with freshly made Parmesan crisps on top for added crunch.
