Ingredients
- 1 pound chicken breasts, boneless and skinless
- 1 cup orzo, uncooked
- 1 whole lemon, juice and zest
- 2 tbsp dill, chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- salt and pepper
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts and cook until browned on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
- Add the orzo to the skillet and cook for 1-2 minutes until slightly toasted, stirring occasionally.
- Pour in the chicken broth, heavy cream, lemon juice, and zest. Stir to combine.
- Bring the mixture to a simmer, then reduce the heat to low.
- Return the chicken to the skillet and cover. Cook for 15-20 minutes, stirring occasionally, until the orzo is cooked through and the chicken is tender.
- Stir in the chopped dill and adjust seasoning with additional salt and pepper to taste.
- Transfer the creamy lemon dill chicken and orzo to a serving dish. Garnish with extra dill and lemon wedges if desired.
