Roasted Mushroom and Caramelized Onion Sandwich

Ingredients

  • 1 lb mushrooms, sliced
  • 2 large onions, sliced
  • 2 tbsp olive oil, divided
  • 1 tsp balsamic vinegar
  • 4 slices cheese
  • 8 slices bread

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange mushrooms on a baking tray. Drizzle half of the olive oil and all the balsamic vinegar over them. Season with salt and pepper. Roast in the oven until golden brown, about 20 minutes, turning halfway through for even cooking.
  3. While mushrooms roast, heat the remaining olive oil in a skillet over medium heat. Add onions and reduce heat to low. Slowly caramelize the onions, stirring occasionally to prevent burning, about 25 minutes.
  4. Toast the bread slices until they are golden and crisp.
  5. Place slices of cheese on half of the bread slices. Use the residual heat of the toasted bread to melt the cheese slightly.
  6. Layer roasted mushrooms and caramelized onions over the cheese. Cover with the remaining slices of bread.
  7. Press sandwiches lightly and serve warm.
