Ingredients

  • 1 pound boneless skinless chicken breast, cut into bite-sized pieces
  • 2 mandarin oranges, peeled and segmented
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1/2 cup sliced bell peppers
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons sesame seeds
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste

Instructions

  1. In a bowl, combine soy sauce, honey, rice vinegar, sesame oil, and cornstarch. Stir until smooth and set aside.
  2. Heat vegetable oil in a 9-inch skillet over medium-high heat.
  3. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  4. In the same skillet, add garlic, ginger, and bell peppers. Stir-fry for 3-4 minutes until peppers are tender.
  5. Return the chicken to the skillet, and add mandarin orange segments.
  6. Pour the prepared sauce over the chicken and veggies, stir to combine.
  7. Cook for 2-3 minutes, allowing the sauce to thicken slightly.
  8. Season with salt and pepper to taste.
  9. Sprinkle with sesame seeds before serving. Serve hot over steamed rice or noodles.
