  • 4 medium artichokes, trimmed and cleaned

  • 1 15 oz can diced tomatoes, drained

  • 2 tbsp olive oil, extra virgin
  • 1 tsp oregano, dried
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the couscous according to package instructions.
  3. In a large bowl, combine the cooked couscous, drained diced tomatoes, crumbled feta cheese, chopped parsley, extra virgin olive oil, dried oregano, salt, and black pepper.
  4. Cut the top off each artichoke and remove the inner choke carefully. Fill each artichoke with the couscous mixture, pressing gently.
  5. Arrange the stuffed artichokes upright in a baking dish with a small amount of water at the bottom to prevent sticking.
  6. Cover the dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes until the artichokes are tender.
  7. Remove the artichokes from the oven and let them cool slightly before serving.
