- 4 medium artichokes, trimmed and cleaned
- 1 cup couscous, uncooked
- 1 15 oz can diced tomatoes, drained

- 2 tbsp olive oil, extra virgin
- 1 tsp oregano, dried
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the couscous according to package instructions.
- In a large bowl, combine the cooked couscous, drained diced tomatoes, crumbled feta cheese, chopped parsley, extra virgin olive oil, dried oregano, salt, and black pepper.
- Cut the top off each artichoke and remove the inner choke carefully. Fill each artichoke with the couscous mixture, pressing gently.
- Arrange the stuffed artichokes upright in a baking dish with a small amount of water at the bottom to prevent sticking.
- Cover the dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes until the artichokes are tender.
