Ingredients

  • 1 cup quinoa
  • 1 lb shrimp, peeled and deveined
  • 1 medium red bell pepper, diced
  • 1 medium zucchini, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • 1/2 tsp thyme
  • 4 cups vegetable broth
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp olive oil

Instructions

  1. Heat 2 Tbsp of olive oil in a large pot over medium heat. Add the onion, red bell pepper, zucchini, and garlic, cooking for about 5 minutes until the vegetables are tender.
  2. Stir in the quinoa, oregano, thyme, and vegetable broth. Bring to a boil, after which reduce the heat and allow it to simmer for 15 minutes.
  3. Add the shrimp to the pot. Continue cooking for an additional 5-7 minutes, until the shrimp are pink and cooked through.
  4. Remove the pot from heat, stirring in the feta cheese until well combined.
