Ingredients
- 1 cup quinoa
- 1 lb shrimp, peeled and deveined
- 1 medium red bell pepper, diced
- 1 medium zucchini, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp oregano
- 1/2 tsp thyme
- 4 cups vegetable broth
- 1/2 cup feta cheese, crumbled
- 2 tbsp olive oil
Instructions
- Heat 2 Tbsp of olive oil in a large pot over medium heat. Add the onion, red bell pepper, zucchini, and garlic, cooking for about 5 minutes until the vegetables are tender.
- Stir in the quinoa, oregano, thyme, and vegetable broth. Bring to a boil, after which reduce the heat and allow it to simmer for 15 minutes.
- Add the shrimp to the pot. Continue cooking for an additional 5-7 minutes, until the shrimp are pink and cooked through.
- Remove the pot from heat, stirring in the feta cheese until well combined.
