Mediterranean Tofu and Tomato Linguine with Oregano

Ingredients

  • 1 block firm tofu, cubed
  • 1 pint cherry tomatoes, halved
  • 1/2 pound linguine
  • 2 cloves garlic, minced
  • 1 Tbsp dried oregano
  • 3 Tbsp olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
  3. Add the cubed tofu to the skillet and cook for 6-8 minutes, turning occasionally, until golden brown on all sides.
  4. Add the halved cherry tomatoes and dried oregano to the skillet. Season with salt and pepper to taste. Cook for 3-4 minutes until the tomatoes are slightly softened.
  5. Add the cooked linguine to the skillet. Toss everything together until well combined. Adjust seasoning if needed.
  6. Transfer to a serving dish.
