  • 4 large eggs
  • 4 corn tortillas
  • 1/4 cup milk
  • 1 medium onion, diced

  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • salt and pepper to taste
  • 1/4 cup cilantro, chopped

Instructions

  1. Cut the corn tortillas into thin strips.
  2. Heat olive oil in a skillet over medium heat.
  3. Add tortilla strips and fry until crispy, about 3-4 minutes. Remove and set aside.
  4. In the same skillet, add butter and sauté the diced onion and jalapeño until softened.
  5. In a bowl, whisk together eggs and milk. Season with salt and pepper.
  6. Pour the egg mixture into the skillet with the onions and peppers.
  7. Cook, stirring gently, until eggs are just set.
  8. Add the crispy tortilla strips and shredded cheddar cheese to the skillet.
