Mjaddara Hamra (مجدرة حمرا)

Ingredients

  • 1 cup brown lentils
  • 1 cup basmati rice
  • 3 large onions, thinly sliced
  • 1/4 cup olive oil
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp cinnamon

Instructions

  1. Rinse the brown lentils under cold water.
  2. Rinse the basmati rice under cold water.
  3. In a large pot, heat the olive oil over medium heat and sauté the thinly sliced onions until they are caramelized, about 10 to 15 minutes.
  4. Add the cumin, turmeric, and cinnamon to the onions and stir for another minute until fragrant.
  5. Stir in the rinsed lentils and rice, then pour in enough water to cover the mixture by 1 inch.
  6. Bring to a boil, reduce the heat, cover, and let it simmer for about 30 minutes or until the lentils and rice are tender and the liquid is absorbed.
  7. Once cooked, fluff the mixture with a fork. Adjust seasoning with salt and pepper to your liking.
