Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 1 can diced tomatoes
- 2 cans chickpeas, drained and rinsed
- 4 cups vegetable broth
- 1 bunch kale, stems removed and leaves chopped

- 1/4 cup fresh cilantro, chopped
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and saute for 5 minutes until soft.
- Stir in the garlic, cumin, coriander, turmeric, cinnamon, and cayenne pepper, and cook for 1 minute until fragrant.
- Add the diced tomatoes, chickpeas, and vegetable broth to the pot.
- Bring the mixture to a boil, then reduce heat to low, cover, and let simmer for 20 minutes.
- Stir in the kale and continue to simmer uncovered for an additional 10 minutes until kale is tender.
- Season the stew with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
