Ingredients
- 2 lbs clams, scrubbed and cleaned
- 2 Tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 1 lemon, juiced
Instructions
- Heat 2 Tbsp olive oil in a large pot over medium heat.
- Add the onion and garlic, and cook for 3 to 4 minutes until softened.
- Stir in 1 tsp ground cumin, 1 tsp ground coriander, and 1 tsp paprika, and cook for 1 minute until fragrant.
- Add the clams, 1/2 cup chopped fresh cilantro, and 1/4 cup chopped fresh parsley. Cover and cook for about 5 to 7 minutes until the clams open.
- Discard any clams that do not open. Stir in the juice of 1 lemon.
- Serve immediately with crusty bread.
