Ingredients

  • 2 lbs clams, scrubbed and cleaned
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced

Instructions

  1. Heat 2 Tbsp olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and cook for 3 to 4 minutes until softened.
  3. Stir in 1 tsp ground cumin, 1 tsp ground coriander, and 1 tsp paprika, and cook for 1 minute until fragrant.
  4. Add the clams, 1/2 cup chopped fresh cilantro, and 1/4 cup chopped fresh parsley. Cover and cook for about 5 to 7 minutes until the clams open.
  5. Discard any clams that do not open. Stir in the juice of 1 lemon.
  6. Serve immediately with crusty bread.
