Ingredients

  • 1 cup green or brown lentils, rinsed and drained
  • 1 cup basmati rice
  • 3 medium onions, thinly sliced
  • 2 tsp cumin, ground
  • 1/2 tsp cinnamon, ground
  • 3 tbsp olive oil
  • 4 cups water
  • salt and pepper

Instructions

  1. Heat 2 tablespoons of olive oil over medium heat in a large pot.
  2. Add the sliced onions and cook for about 20 minutes until caramelized.
  3. Remove half of the onions and set aside for garnish.
  4. In the pot with the remaining onions, add cumin and cinnamon, stirring for 1-2 minutes until fragrant.
  5. Add lentils, rice, water, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils and rice are cooked through.
  6. Serve Mujaddara topped with the reserved caramelized onions.
