Ingredients

  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 medium red onion, sliced
  • 4 large whole wheat tortillas
  • 1/2 cup hummus
  • 1 Tbsp olive oil
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Preheat grill to medium-high heat, about 375°F (190°C).
  2. In a large bowl, toss sliced bell peppers, zucchini, and red onion with olive oil, garlic powder, salt, and pepper.
  3. Grill the vegetables in a grill basket or directly on the grill grates until tender and slightly charred, approximately 5 to 7 minutes per side.
  4. Warm the tortillas on the grill for about 30 seconds per side until pliable.
  5. Spread a generous layer of hummus onto each tortilla, using about 2 Tbsp per wrap.
  6. Top the hummus with an even layer of grilled vegetables.
  7. Wrap tightly by folding in the sides and then rolling up from the bottom.
  8. Slice each wrap in half and serve immediately.
